Sophia Beito was born as Sophia Caroline Underdahl on 6 April 1891 in Pine Island, Minnesota to Norwegian immigrants, Lars S. and Christina (Gudvangen) Underdahl. She passed away on 22 April 1955 in Roseau County, Minnesota.

Sophie and Gilbert E. Beito were united in marriage in 1909. They settled in Huss Township, Roseau County, east of Strathcona, Minnesota. They farmed and milked cows. Gilbert also sold fish. Gilbert and Sophie moved to Holt, Minnesota in the later 1940's. Sophie had a cafe in Holt.

Gilbert and Sophie separated.

Sophie moved to Strathcona and ran a cafe and boarding house there. Later she lived in Greenbush for a year and again returned to Strathcona and resided there the rest of her life.

Gilbert moved back to the farm near Strathcona, The house was struck by lightning and burned. He then lived in a trailer house on his son, Elwood's property across the highway from Art Berg's farm, northeast of Middle River, Minnesota.

Sophie and Gilbert had 15 children, 13 reached adulthood: Gladys, Lennie, Gilman, Alice, Marvin, Walter Gorman, Harry, Lillie, Palmer, Elwood, Maureen, Arne, and Gerald. Walter died at 5 weeks of age, and Sadie died at 8 years of age. Six of their sons served in the Military: Harry, Walter, Palmer and Elwood in WWII and Arne and Gerald in the Korean Conflict.
