Joseph Hipps was born Mar 13, 1844, in Cambria County, Pennsylvania, to parents Adam Joseph Hubsch, born in Germany (1805-1860), and Frances Baker (1810-1871), also born in Germany. The German name Hubsch is also spelled Huebsch, but most of Adam Hubsch's children were using the spelling of Hipps in the latter part of the 1800s.

Joseph was the 5th child in a family of 8 known children, all born in Pennsylvania. His brothers and sisters were: Mary Anna Hipps-Woodley (1833-1895), John Hipps (ca 1834-), George Hipps (ca 1835-1863), Catherine Frances Hipps-Kirkpatrick (1837-1919), Elizabeth Hipps-Flanagan (ca 1846-), Margaret Hipps-Gray (1847-1937), and Magdalen Hipps (ca 1849-).

Joseph was raised in a life of farming in Cambria County, Pennsylvania, where they also attended school.

In 1865, when Joseph was 20 years old, he joined the Union army as a Private in CO H, 4th PA Cavalary, 2d Brig, 1d Div. Even with the lateness of his enlistment, he was involved in scouting, skirmishing, guard and garrison duties and was honorably discharged June 30, 1865, at Lynchburg, Virginia.

On June 30, 1868, in Cambria County, Joseph married Mary Kibler, born in Pennsylvania (1845-1926). Mary was a daughter of Jacob Kibler, born in France (1815-1891) and Barbara Dietrich, born in Germany (1818-1888).

Joseph and Mary also settled into a life of farming and had ten children, all born in Pennsylvania: George Edward Hipps (1869-1936), Cecelia Hipps-Drass (1871-1961), John Jacob Hipps (1872-1955), Anna Hipps (1875-1877), Joseph Anthony Hipps (1877-1969), Adam Francis Hipps (1879-), Agnes Hipps-Yeager (1881-), Margaret Hipps-Sullivan (1883-1971), Adelaide Ada Hipps-Bradley (1886-1952), and Barbara Martha Hipps-Reese (1887-1975).

Joseph and Mary remained in Cambria County, Pennsylvania, for the remainder of their years. Joseph died on Dec 6, 1911, and he and his wife Mary, who died in 1926, are buried in the St. Lawrence Cemetery.
