For the 1860, 1870, and 1880 censuses, Hubbard was living with his parents and listed as "John H. Hall" (There are no census records for 1890.) In 1900, living with his wife and children, he was also "John H. Hall." Then in 1910 and 1920, he was "Hubbard J. Hall." (Because wife and children are the same as he used the two names, we can be certain that it's the same person. We will probably never know why.)
