Elizabeth Apple was born July 15, 1797, in Lower Saucon Township, Northampton County, Pennsylvania, the daughter of Andrew and Catharina Nusbickel Apple. On February 15, 1821, she married Joseph Ehrhart, son of Henry and Elizabeth Overbeck Ehrhart. They were the parents of 8 children: Elizabeth, Henry, Catharine, Levina, Andrew, Jacob, Sarah Ann and Joseph Ehrhart (Jr.).

From the Appel Family history by Fred W. Appel (CS71.A643, 1976):

"Elizabeth (daughter of Andrew Apple), still living at the mill after her husband's death, had a prosperous if not an affluent living. Her land adjoined that of her brother, Jacob. She was 54 at the time of her husband's death, 57 when her father died. She lived until 1880. Her will mentions two sons, Henry and Joseph (if there had been a third one, another Andrew, he existed no longer) and four daughters, Sarah, Elizabeth, Catherine and Sevina (deceased). Elizabeth was able to make generous legacies to each of her five living descendants, because her husband had engaged in other profitable businesses as well as the running of the mill." [note by Gregg Freese: the will below reflects the error by Mr. Appel regarding a third son, Andrew. In fact, it is through this overlooked son Andrew that the mill property eventually passed down, after having been under the ownership of son Joseph, who died without having married and without having had any children. It should also be noted that Elizabeth Ehrhart wrote the will less than 2 weeks following the death of her son, Jacob Ehrhart, who in fact was a fourth son of Joseph and Elizabeth Apple Ehrhart.]
