ALICE'S OL' TIMEY PEACH COBBLER

Alice showed me how to make this peach cobbler from scratch. She rarely ever measured ingredients to make anything from biscuits to cakes. She used what she had available; a "peach man" drove from South Carolina every year with a bushel of peaches for her. She canned peaches by the quart till they were all 'saved.' When we kids picked wild blackberries, she'd bake some more cobblers and "put up" the rest. She was famous for her homemade meals that almost always included a dessert like this peach cobbler. Here is her recipe:

2 large cans of sliced Peaches, Reserve Syrup
Cinnamon
Nutmeg
Brown Sugar
White Sugar
Butter or Margarine
Biscuit dough

In a large deep glass bowl, empty one can of peaches and about half the syrup. Lightly sprinkle the cinnamon and nutmeg and dot with butter or margarine. Sprinkle about 1/4 cup each of the sugar and brown sugar. Using half the biscuit dough, roll it out on a floured surface until it is thin but not so thin that it easily tears. Cut the dough so that it is about half an inch wider on all sides than the bowl. Cover the peach mixture and turn down the edges inside the bowl. This will be your middle dumpling. Add the next can of peaches and about half the syrup. Repeat as before with spices, butter, and sugar. Using the second half of the dough, roll it on a floured surface to fit the cobbler top. This one should be a little thicker than the middle dumpling. Turn down any edges so that the top looks nice. Using a knife, pierce from top to bottom to allow juices room to expand and soak in. Bake in 350° oven for about 45 minutes or until the top crust is browned.

We sure do miss Alice and we hope you try her peach cobbler real soon.
