Eppie is a daughter of Abe and Susan (Clark) Mauk. She married John Copp 10 February 1901 at Chucky River, Washington County, Tennessee. They moved first to Colorado, then to Kansas City, Kansas about 1902. They have three children: Florence, Rex, and Blanche. John died in 1927. Eppie married a second time, then divorced, no children.

She appears on the 1880 and 1900 Censuses with her parents, Abraham and Susan.

Family lore states Eppie was quite a force to be reckoned with. When her only son was married, he didn't tell his mother. His new bride told his mother several days later.

She appears on the 1910, 1915, 1920, and 1925 Censuses with her husband, John.
