Born in Durkheim, Bayern, Germany, Elisabeth was the fourth of five children born to Friedrich and Anna Marie Mesel Günther. She was barely five years old when she made the journey with her parents and siblings to New York on the SS Pollux. Elisabeth lived out the rest of her life at her parents farm in Logan County, Arkansas just east of Paris. A member of St. Joseph's Catholic Church in Paris, Elisabeth never married and was sickly much of her life. She died the day after her thirty first birthday.
