Joseph arrived in the US at the port of New York with his parents, Francois and Catherine, and 2 siblings on 28 July 1828 aboard the ship Le Voltaire which had sailed from the port of Le Havre, France. The Pierson family first settled in Stark County, Ohio. He married Mary Catherine Maillard in Stark County on 12 January 1847.

Joseph and Mary Catherine moved to Christian County, Illinois for a short time in the 1860's. In 1871, the family moved once again to Chillicothe.

Joseph owned and operated a brewery east of Chillicothe. It has been said that he was a very generous employer, a good neighbor, and would often contribute to causes which promoted the town. He turned over the operation of the brewery in 1877 to his son, Frank. The business continued until 1888.
