Inventor. He was a physician scientist in the Gastroenterology Division at the University of Florida College of Medicine, where he invented ProFibe. In 1973, with a fully equipped laboratory and a $300,000 sponsorship from the Florida Department of Citrus, he began to research the benefits of grapefruit pectin, a water-soluble carbohydrate that yields a gel used to make jellies and jams. He studied a group of pigs and found out that grapefruit pectin prevented the narrowing of arteries and inhibited cholesterol levels even with a high-fat diet. Dr. Cerda found that adding grapefruit pectin to a daily diet significantly reduces a person's cholesterol levels. After 20 years, his research eventually led him to market ProFibe, a flavorless, powdered dietary supplement which is mixed into prepared foods or blended into beverages and has been clinically demonstrated to be an effective adjunct to diet and exercise for reducing cholesterol levels and reducing soft arterial plaque. ProFibe is approved under the FDA Generally Recognized As Safe ruling and accepted by the World Health Organization.
