Mary didn't have a middle name. I think someone has assumed she did and it was Beverly because she gave that name to the son she had with John Hurst. But the son was named for Virginia Governor Beverly Randolph, who signed a few of the deeds for land purchases made by John Hurst when he and most of his family were living in Persimmon Bottom on New River in Montgomery County, Virginia.
