George was the son of George and Sarah Sims of Warren County, Ohio. His father was a native of New Jersey and his mother of Ohio. His father was a cooper by trade and George Jr. followed his father in that trade.

He married Silvina Loy in Greene County, Ohio on Jan 26, 1859.

On Aug 22, 1862 George enlisted in Company K. 79th Indiana Infantry and participated in the Battle of Stones River, TN where the regiment had 7 men killed and 44 wounded. At the Battle of Chickamauga they had 1 killed and 40 wounded with 13 missing in action. They were part of Grant's Army that stormed Missionary Ridge, TN. On Jan 20, 1864 George transferred to the 1st U.S. Veteran Volunteer Engineers.

He received an Army Invalid Pension beginning on Sep 28, 1886 and his wife Silvina received an Army Widows Pension beginning on Jan 9, 1893.

In the 1880 census of Johnson Co., IN., George is described as a 43 year old cooper by trade living with his wife Selvira age 43 born IN., daughters Lillie K. 19, Effie B. 10, Tesy M. 8; also living with them was his brother Martin V. Sims age 35.
