Carol was born on July 22, 1935 to Florence (Clay) and John Breckling in Davenport, Iowa. She was united in marriage to Russell Charles Ewoldt on January 14, 1956.
Carol was employed as a bookkeeper at Davenport Bank until she stayed home to start a family in 1967. Russ and Carol were involved with Davenport Speedway and dirt track racing from 1960-1973, including several Midwest tracks. Carol was known for taking a few wins for herself. She enjoyed long walks, roller skating, and riding her bike with her granddaughter. She visited most of the United States on summer vacations. Carol was an avid baker for years, and opened her own business ‘Carol’s Wedding Cakes’ in 1986. Once she retired, she sold cross stitch items she made at craft shows. She enjoyed reading, audio books, telling stories and singing old time songs. She got to see the Cubs play live, and was ecstatic when they won. Carol slowly went blind and never got to see her great granddaughter, but was happy to hold her any way she could. Everyone loved Carol. She lived at Palmer Hills Retirement and Country Manor. Carol is survived by her daughter Rita (Paul) Schroeder, granddaughter Ashley Wiechman, great granddaughter Winry Hoskins, sister, Karen (Bob) Spring and several nieces, nephews, and cousins. She was preceded in death by her parents and her loving husband Russell.
