In the 1900 U.S. Census, the widowed Catherine was living in Martinsburg, Berkeley County, West Virginia. She was the mother of 10 children and 4 were still alive.
Catherine wrote her will on 3 Feb 1908. She mentions her sons, Jacob E., Aaron L., Charles F., and Richard A. Helferstay. Jacob was the executor of the will. It was probated on 11 Feb 1908 in Berkeley County, West Virginia.

Mrs. Katherine Helferstay, a native of Martinsburg and lifelong resident of the city, and a most estimable and well-known lady, died at the home of her son, Mr. Jacob Helferstay, in Baltimore, where she went on a visit about six weeks ago. She was the widow of Mr. William Helferstay, for many years a prominent resident of this city.
Death was due to a complication of diseases, from which she had been suffering for some time, and which she was unable to successfully combat by reason of her advanced age. She was in her 79th year.
Mrs. Helferstay was born and passed her entire life in this city, and was known and greatly beloved by a wide circle of friends. She was a lady of many splendid womanly traits and Christian virtues, and nearly all her life was a devout and consistent member of St. John's Lutheran church. She was a member of the Berkeley chapter of the Daughters of the Confederacy and took an active part in the charitable and social work of that organization.
Surviving are the following sons: Mr. Jacob Helferstay, Mr. Aaron Helferstay and Mr. Frank Helferstay, of Baltimore, and Mr. Anthony Helferstay, of Argentina, Kas. One sister and brother also survive-- Mrs. Eliza Wharton and Mr. Strayer Poisal, of this city.
The remains will be brought to this city Sunday on passenger train No. 55 over the Baltimore & Ohio.
