Gilbert was the son of John and Amelia nee Lipke Langholff. He farmed in the town of Oakland Jefferson Co Wisconsin all his life. On Nov 25 1908 he married Johanna Frey, who died in 1952. He was a member of St James Lutheran Church in Cambridge Wisconsin and the Oakland Conservation Club.
