Jozef "Joe' Szczebak was born in Zalipie, Poland. His father's name was Martin Szczebak, his mother was Katarzyna Starsiak. He had 1 sibling also born in Poland, Szymon (b. 1888). Joe was a widower, and retired mill worker, and carpenter living in the Nashua, New Hampshire area when he met Anna Adamski, a widow who had had five children. They married in 1952. and moved to Springfield, Massachusetts, moving into the two-family home owned by Anna's son, Anthony Adamski. his wife Mary, and their family. Joe was the surrogate grandfather to all of Anna's grandchildren and became the only Polish grandfather they ever knew since Anna's first husband passed away in a tragic accident in 1931. He was a calm, kind, and gentle man who liked to sit on a bench that he built, by the kitchen door and smoke cigars. He was loved by Anna, her children, and grandchildren. He was called Grandpa by the grandchildren, and Pop by Anna's children. Jozef was 76 years old when he died on Monday November 27, 1961.

For all the stories that were never to be told,
Back to a time when I was a boy so long ago,
I knew a man whose kindness touched the hearts of many,
And he would often be the first to lend you his last penny,
Yes his heart was pure gold forged from out of love,
Right from the hands of the almighty who sits high above,
There were times I must have driven him crazy as if he were my toy,
With all my "want to's" and "why not's" when I was a boy,
He loved and cared for all those that he knew,
His family, friends and most of all you,
Many happy memories I carry within my heart,
Vowed never to forget and never to be apart,
As a boy I would look up to this man with great awe,
For you see he was my friend, and he is my Grandpa.
