Lecturer at the Collège Sainte-Marie of Caen between 1960 and 1961, Guillon served as almoner for students at the University of Besançon from 1961 until 1967, when he was named Superior Provincial of his Congregation, a position which he held until 1971, when he was elected Superior General, an office which he held till 1983.
Exercising pastoral ministry at Saint-Michel-sur-Orge for the Diocese of Évry-Corbeil-Essonnes from 1983 till 1988, he was in charge among others, of the formation of priests.
On March 17, 1988, at 55 years of age, Guillon was appointed Coadjutor Bishop of the Diocese of Quimper et Léon by Pope John Paul II, receiving his episcopal consecration on the following April 10, from Bishop Francis Jules Joseph Marie Barbu, assisted by Bishops Armand Le Bourgeois CIM., and Guy Alexis Herbulot. Following the retirement of the named Monsignor Barbu, Guillon succeeded him as Bishop of the Diocese of Quimper et Léon on May 3, 1989.
The Bishop retired from office at 75 years of age on December 7, 2007, and was succeeded by Msgr. Jean-Marie Le Vert. He passed away after suffering a cardiac crisis at Redon du Theil in the morning of Friday, July 9, 2010, aged 78.
Bishop Guillon's funeral Mass was celebrated on Thursday, July 15, at 15 hrs., inside the Cathédrale de Quimper, where interment also took place at the chapelle Saint-Antoine.
