The third of eight children of Henry George Simon and Apollonia Hoffmann Simon, Christine Simon Stauber was born November 21, 1897 in Camp Springs, Campbell County, Kentucky. She married Christian Stauber on June 05, 1920 in Corpus Christi Roman Catholic Church in Newport, Campbell County, and they had six children: Christian ("Chris") Henry Stauber, Ida Mae Stauber Jacobs, Ruth Ann Stauber Elsbernd, Jeannette Catherine Stauber Heileman, Leo ("Lee") William Stauber, and Mary Margaret Stauber Donnelly. Christine met her husband through her uncle (her mother's brother) who was his co-worker. Widowed at age 37, Christine raised her six children alone working as a seamstress. Christine's daughter Mary Stauber Donnelly told her children her mother's stories of growing up so poor on a small farm in Camp Springs that their mules were blind. Mary also remembered how her mother gave each child one penny every Sunday to donate at church. Christine died at age 96 on January 4, 1994 in Fort Thomas, Campbell County.

She was the third of four generations of mothers and daughters buried at St. Joseph Catholic Cemetery in Wilder, Campbell County. Her ancestry was German.
