Founder of the El Chico restaurant chain ~ Adelaida Cuellar was born near Matehuala, Nuevo Leon, Mexico. Along with her family, she eventually came to Texas and settled in Kaufman. In 1926, with 12 children to support, Adelaida decided to supplement the family income by selling homemade tamales at the Kaufman County Fair. The success of this small tamale stand led to a series of restaurant ventures and the beginning of the successful El Chico Corporation, now serving 78 locations.
