Joseph was a farmer on "Jackson Hill" in his native town, where he appears in the US Census of 1790 as head of a family consisting of one male over sixteen years, three males under sixteen years, and four females. He was a rigid Baptist and of honorable character, and died at Middlefield, CT, July 9, 1828.

He married Elizabeth Cornwell, daughter of Lieut. Nathaniel and Mary (Cornwell) Cornwell, July 5, 1779. They had ten children:
1. Elihu Coe (1780 - 1859)
2. Millicent Coe (1782 - 1854)
3. Joseph Coe (1784 - 1874)
4. Curtis Coe (1786 - 1875)
5. Lois Coe (1788 - 1881)
6. Esther Coe (1790 - )
7. Enoch Coe (1791 - 1798)
8. Calvin Coe (1794 - 1886)
9. Luther Coe (1796 - 1798)
10. Cyrus Coe (1798 - 1822)
