Evelyn Ellis was born on December 27, 1907 on a homestead ranch south of Colorado Springs to Guy and Bessie Parker.

She died Sunday, June 15 at Mount St. Francis Nursing Home. She had lived in her own home at Juniper Valley until February of this year.

Evelyn married Walter Ellis, a New Yorker seeking treatment for tuberculosis, in June 1935 in Colorado Springs. She lovingly cared for him until his death 20 years later.

In 1951 Evelyn, with her sister and brother-in-law, founded Juniper Valley Ranch Dining Room which was her pride and joy. Its enduring success remained her life long passion. Many of Evelyn's family and friends celebrated her 100th birthday with a party just this past December at the restaurant.

She was preceded in death by sisters, Elizabeth Davis, Ethel Shirola, Lyla Smith and niece, Sydney Dickey. She is survived by nephew, Matt Shirola and niece Rhonda Nichols of Colorado Springs; niece, Ramona Potter of Missouri and numerous great nephews and nieces.

Evelyn was a member of St. Joseph Catholic Church and the Colorado Cowbells. Funeral services will be held at St. Joseph Catholic Church, 1830 S. Corona Avenue, Colorado Springs, at 10:00 a.m., Thursday, June 19. Interment will follow at Evergreen Cemetery.
