Simeon was first married to Rebecca Jane Wilson on 8 November 1849 and had 7 children: Mary, Lon, Chal, Alma, John, George and Lucy. Rebecca died in 1865 (burial place unknown) and he married Phoebe Tipton on 22 March 1866, and had 4 more children: Lizzie, Ross, and twins Will and Linley.

Simeon was a cabinet-maker and carpenter, and made coffins, among other things. This started the family business, now Grisell Funeral Homes, which is still running in West Virginia nearly 170 years later by descendants of his son Edward Chalmers "Chal" Grisell.

According to the March 11, 1903, Omaha Morning World Herald, Simeon was the oldest citizen of Bartley and had made his own coffin a few years before, and was buried in it.
